Can you imagine food without spices? It would taste really bland! But too much of a good thing isn’t good either. The true purpose of seasoning with herbs and spices is to compliment your dishes, not overwhelming the flavor of the food.

I will provide useful tips on how to use your favorite herbs and spices, how to store them so they stay fresh and if you have a garden and love growing your own herbs – when to pick and how to dry them.

Herbs and Spices are divided into groups or categories depending on their usage, or their active ingredients or their growth life cycle. Usage of herbs and spices include medicinal purposes, culinary, aromatic or ornamental. The active ingredients of herbs classify them into the aromatic, astringents, bitter or nutritive. The growing life cycle of herbs divide them into annuals, biennials or perennials.

Spices and herbs have always fascinated me. One of my earliest memories is working in the garden with my mother and enjoying the aroma of the herbs as you rubbed up against them. The summer savory soups she made using fresh sorrel is still my most favorite soup of all time. Nothing else comes anywhere close to the pleasant smell of Summer Borscht soup simmering on the stove in early spring. We are all aware of the seasoning value of herbs and spices but let’s also examine the many other uses of these interesting plants. Ancient medicine had only these natural plants available to them and you will be amazed to discover just how useful these ancient home remedies were and still are.
