Horseradish
Before modern medicine, horseradish was invaluable to people for maintaining various aspects of their health. It was used as a digestive, antiseptic, stimulant and to make poultices for rheumatism, chest complaints and circulation problems. Today one of the unusual uses of horseradish is to reduce the darkness of age spots. Mix one teaspoon of regular horseradish with a teaspoon of ordinary vinegar and apply to age spots. You are, in fact, bleaching them lighter.

Growing Horseradish
Although horseradish is a perennial plant I would encourage you to treat it like an annual to avoid its highly invasive nature. Once it has established itself as a perennial it is very difficult to eradicate. Plant the 6 inch long upper portion of the root 12 inches apart in ridges of rich soil in early spring. Water well in dry weather and in late autumn dig up the roots and store them in moist sand, just like we used to store carrots before the age of refrigerators.

The young leaves gathered in spring are used in salads and soups while the tubers dug up in the fall are used to make the horseradish sauce with which we are all familiar.
Recipe for Homemade Horseradish
To preserve the aromatic pungency of the root place the peeled root tuber in a food processor and add just enough white cider vinegar to moisten and process till finely chopped. Add a few teaspoons of sugar to make a loose paste and season with salt. When you taste it hold on because it will take your breath away. Don’t worry though it looses its bite with age. Once prepared store in the refrigerator.

A friend of mine was cleaning out her garden and gave me some horseradish and it grew like a weed so I decided to make some cream, because my husband loves it with his prime rib, roast etc. It was a HIT! We love it and it was easy to make.
Some tips on other uses for Horseradish.
To spice up French Dressing add a tablespoon of horseradish to 1/2 cup of dressing or add one tablespoon of horseradish to 1/2 cup of sour cream to eat with your baked potatoe.
Fill celery stalks with a mixture of 1 cup mashed avocado, and 2 tsp. prepared horseradish. Sprinkle with paprika. Chill
