Achieving a riot of brilliant color with herbs is not easy. Most herbs are subtly colored, low-key plants, which helps to explain the healing sense of refreshment and well being one experiences in a herb garden. Vibrant, exciting colors are only found in a few flowers and leaves. Peonies, poppies, nasturtiums, starflower and hollyhocks are a few examples.
Other Notable Herb Flowers
Lavender – soft purple, for scent and pot-pourri
Nasturtiums – vivid reds and yellows, use for color garnishes
Violets – purple, for medicines and crystallized as decoration
Elderflowers – white and fragrant, for wines, cordials and flowering fruit dishes
Marigolds – vivid orange, for salads, pot-pourri and food coloring
Borage – rich blue, for salads and summer drinks
Wall Germander – startling carpet of pink color that will be alive with bees in the summer
Rose Petals- red roses of scented varieties, for color and fragrance, wines and perfumes
Woodruff – tiny and white, imparts scent of hay and vanilla when warm. Very refreshing
Wild Marjoram – in full bloom reveals an intensity of color to match any decorative flowering shrub
French Sorrel – creates a carpet of ground cover green foliage in addition to its tangy flavor

I noticed you haven’t mentioned hollyhocks. This herb has brilliant colored flowers in almost every hue.
If you want to add some punchy color to your garden you might want to try Hollyhock. It is a biennial, and there are many colors to choose from, anywhere from black to white and everything in between.
