Herb – Dill

Dill is one of the most common herbs in North America. It is an annual tall and lacey plant that grows 18-30 inches in height, with fine feathered blue-green leaves and hollow stems. It has small open umbels of creamy-yellow flowers in summer, followed by dark brown seeds.

Sow these seeds in rows or small patches in spring, and again in the summer for continual fresh young leaves. Grow well away from  fennel, with which dill cross-pollinates readily.

Dill Uses
Dill is used as a condiment and flavoring and as a pickling spice. Dill Water is often used to relieve digestive problems and flatulence. It was used by  Egyptian mothers to calm colicky babies because the active ingredient is transferred in the mothers milk. It can be used to perfume cosmetics;  it’s medicinal oil is distilled from the leaves, stems and seeds.

Carrot Dill Soup Recipe

I love this carrot soup made using young carrots and fresh dill.

1 pound of carrots, sliced
2 teaspoons vegetable oil
2 teaspoons minced garlic
1 cup of chopped onion
3 1/2 cups of chicken stock
3/4 cup of 2% milk
2 tablespoons chopped fresh dill
2 tablespoons of chopped fresh chives

Directions

1.  Cook the carrots first until just tender. Drain and set aside

2. Heat oil in skillet using medium heat. Saute the onion and garlic until soft, about 5 minutes. Transfer the onion and garlic to the saucepan with the carrots, and add the chicken stock. Turn heat to medium low, cover and simmer for 25 minutes to blend flavors.

3. Puree the carrots mixture in a food processor, in small batches if necessary. Return to the saucepan, and stir in the milk, dill and chives. Cook just until heated through, and serve.

    D i l l is used in love and protection. The dried seed heads hung in the home, over doorways, and above cradles provides protection. Add the herb to your bath to make you irresistible to your lover.
